Manual or mechanical harvesting?
\nBoth have their advantages and disadvantages… By hand-picking, we of course have the enormous advantage of selecting the grapes in the vineyard and being able to carry them carefully to the winery: not a single leaf, not a single immature bunch will end up in the wine!
\n<\/span>On the other hand, the final quality of the wine varies greatly depending on when it is harvested! Thanks to the machine, you can quickly harvest the Sauvignons when they are perfectly ripe and also during the night in order to capture certain aromas that disappear as soon as the sun rises…
\nIt is a dry white that shows a beautiful liveliness and a lot of aromas. Ideal as an aperitif, it also reveals its full flavour when served with fish and shellfish.<\/p>\n<\/div>\n<\/div>\n

It was 145 years ago that our ancestor, Auguste, settled here and began digging in the tufa stone beneath the hillside supporting his vines. The stones extracted were used to build the house and the farmhouse.<\/p>\n

Today, the estate is classified as “High Environmental Value”<\/strong> represents 45 hectares of vines and covers the entire hillside between the villages of Civray-de-Touraine and Chenonceaux.<\/p>\n
