Malolactic fermentation<\/p>\n<\/div>\n<\/div>\n

\n

The main winemaking operation is alcoholic fermentation. In the case of red wines, once this process is complete and the yeasts die, bacteria take over and consume the malic acid in the wine, transforming it into lactic acid.<\/p>\n

This reduces acidity and stabilises and softens the wine.<\/p>\n<\/div>\n

Brilliant, clear colour. Young, dark violet with purple tints. The nose is intense and precise, with a base of pure fruitiness. In a blend: notes of raspberry, blueberry and plum. Some toasted aromas as well.
\nThe palate appears very tender on the attack: marked sweetness and fruitiness. The volume is balanced with a long, fine tannic structure. Long, fruity finish.<\/p>\n

It was 145 years ago that our ancestor, Auguste, settled here and began digging in the tufa stone beneath the hillside supporting his vines. Today, the estate is classified as “High Environmental Value”<\/strong> represents 45 hectares of vines and covers the entire hillside between the villages of Civray-de-Touraine and Chenonceaux.<\/p>\n
