Fermentation (from indigenous yeasts) and ageing are carried out in vats. <\/p>\n<\/div>\n<\/div>\n<div class=\"wines-infos\">\n<div class=\"wines-infos__content--title\">\n<h5 class=\"h3-title\">TASTING NOTES<\/h5>\n<\/div>\n<div class=\"wines-infos__content--description\">\n<p>The advantage of the &#8220;Clos de la bergerie&#8221;, compared to our other sweet wines, is to preserve freshness and tension. In addition, this cuv\u00e9e reflects its vintage well. Like a year marked by episodes of heat, the wine has a lot of suppleness and roundness, and some notes of pears are revealed on the nose.<br \/>\nIts balance allows for bold pairings, such as a chicken tagine with candied lemon. For more sweetness, it can also be paired with a Savoy cake with yuzu.   <\/p>\n<p>The trick is to remember to put a little touch of acidity in the dish to highlight the richness of the wine.<\/p>\n<\/div>\n<\/div>\n<div class=\"wines-infos\">\n<div class=\"wines-infos__content--title\">\n<h5 class=\"h3-title\">OUR ADVICE<\/h5>\n<\/div>\n<div class=\"wines-infos__content--description\">\n<p>We recommend a serving temperature between 10\u00b0C and 12\u00b0C with possible decanting.
