The vines are planted on clay-siliceous soil and are cultivated organically. Fermentation is carried out 50% using a specific inoculated yeast and 50% by spontaneous fermentation using yeasts from the environment, both processes taking place in stainless steel tanks, followed by a rest of 4 to 7 months in stainless steel tanks and then in the bottle.
