At harvest time, grapes of excellent ripeness are picked with the greatest care. A very slow pressing process extracts the best juice from the pulp. Fermentation in oak barrels at 15-18\u00b0C and the slow maturation of the wines on their lees provide all the conditions for excellent quality.<br \/>\n<strong>Tasting:<br \/>\n<\/strong>Colour: deep yellow with slight orange reflections.<br \/>\nNose: Exotic on the attack, it evolves with successive small aromatic touches that go from white fruits (pears, brugnons) to more candied notes of fig and mango. With aeration, the minerality is revealed.<br \/>\nPalate: Very rich and unctuous on the attack, the palate evolves on spices and very ripe exotic fruits (mango, pineapple).  The acidity reinforces the freshness of the whole and leaves a light palate.<br \/>\n<strong>Food pairing:<br \/>\n<\/strong> Exotic fruit Tarte Tatin with salted butter caramel.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Domaine de la Rouleti\u00e8re is located on a clay-limestone hillside in the commune of Par\u00e7ay-Meslay, near Tours, on the right bank of the Loire. The cellar is exceptional: 800m long on 2 levels dug into the tufeau It was here that the village&#8217;s very first Vouvray brut was created. Today, Jean-Marc and his wife Th\u00e9odora manage the estate with passion. They have the same desire: that of a cleaner agriculture that makes them contributors to the protection of the environment and the preservation of the planet. 27 hectares on a planetary scale is not much, but it&#8217;s important! Organic viticulture means a lot of work, much more than before, but they are proud to offer wines that are more natural and of a high quality.<br \/>\nThis cuv\u00e9e comes from clay-limestone soil, and the grapes are harvested when perfectly ripe and selected. Fermentation takes place in oak barrels.
