Vinification<\/strong> :
\n This cuv\u00e9e has been selected on the most beautiful stony hillsides, on a tuffeau substrate (white chalk from the Turonian). At harvest time, grapes of excellent ripeness are carefully picked and transported to the cellar. Then comes the pressing, which is carried out very slowly to extract the best juice from the pulp. This is followed by cold settling (natural clarification of the must). Part of this wine was fermented in temperature-controlled stainless-steel vats, and the other part in oak barrels (20%), aged on its fine fermentation lees, which are regularly put back into suspension for stirring for 6 months.

\nRoasted asparagus in butter with mousseline sauce or roasted chicken with lemongrass jus.
\nTasting :<\/strong>
