We give time to time for this cuv\u00e9e. Fermentation (from indigenous yeasts) is slow in order to promote a harmonious aromatic expression. Ageing is carried out in vats.  <\/p>\n<\/div>\n<\/div>\n<div class=\"wines-infos\">\n<div class=\"wines-infos__content--title\">\n<p class=\"h3-title\">TASTING NOTES<\/p>\n<\/div>\n<div class=\"wines-infos__content--description\">\n<p>The nose, the mouth, everything is explosive for this wine!<br \/>\nIt has a real power and aromatic complexity. Botrytis, beyond concentration, also gives it fatness. Of course, the balance of the wine is maintained, and notes of gingerbread are revealed on the nose.<br \/>\nTo be enjoyed, with a roasted pineapple seasoned with a long Java pepper with notes of cinnamon. In other words, choose dishes with strong tastes that will stand up to the wine.   <\/p>\n<\/div>\n<\/div>\n<div class=\"wines-infos\">\n<div class=\"wines-infos__content--title\">\n<p class=\"h3-title\">OUR ADVICE<\/p>\n<\/div>\n<div class=\"wines-infos__content--description\">\n<p>We recommend a serving temperature between 10\u00b0C and 12\u00b0C with possible decanting. The region is so named because of its dark soils, mostly composed of a schist basement. There is also sandstone, puddingstones, clay&#8230; and many other geological nuances. <strong>The 27 hectares<\/strong> that make up <strong>our vineyard<\/strong> will therefore benefit and be enriched by this diversity. They are also exposed to a certain mildness of oceanic influence. This unique terroir allows you to explore all the facets of the estate&#8217;s grape varieties, such as Chenin, Cabernet Franc, or Pineau d&#8217;Aunis.
