The soil:<\/strong><\/p>\n

Clay-siliceous with a lot of flint stones on the surface. Limestone at 20-30cm. 100% Pinot Noir<\/p>\n

Winemaking:<\/strong><\/p>\n

Manual harvesting and destemming.
\nThe grapes are put entirely in a stainless steel tank where they stay for 2 to 3 days at 4-6\u00b0 temperature, pumping the juice over the pomace. This is the cold pre-fermentation phase to obtain the aroma precursor and then the fermentation takes place at a temperature of 18 to 22\u00b0 for 8 days to preserve a maximum of fragrance.
\nAgeing on lees in vats for 5 months.<\/p>\n

This is a very supple wine with very pronounced Morello cherry aromas. Ideal for meats and summer barbecues.<\/p>\n
