Philippe and Jean-Marie are committed to restructuring and modernising their estate over the years, in particular with the replanting, in the 2000s, of vines on the prestigious hillside of Bouth\u00e9ran, with its exceptional exposure and terroir.

\nVinification – 100% destemmed harvest, sorted on a vibrating table.<\/strong> The grapes or logs are placed in 600-litre barrels to start their fermentation, which lasts 20 days. Aged in barrels for 6 months.

\nVinification The vines, which are over 50 years old, grow at an altitude of 125 m on the Bouth\u00e9ran hillside, on a soil of weathered rocks with granite resting on a bed of pebbles. Le Bouth\u00e9ran is considered to be the “most beautiful” locality, with slopes of 40% and a purely southern exposure. The pebbles retain heat at night, allowing the grapes to ripen perfectly. As the soil is ‘poor’ in nutrients, pruning and green harvesting lead to a concentration of grapes and lower yields The grapes are harvested by hand, destemmed and only the best grapes are used for this cuv\u00e9e through a new selection process. The next stage – a very unusual one – is fermentation in barrels, which lasts at least three weeks. After fermentation, pressing takes place and the juice returns to the same barrel, where it undergoes a maturation of about 9 months as well as malolactic fermentation.

\nThe two brothers now cultivate 10 hectares of vines in the heart of the C\u00f4te Roannaise vineyards: 8 hectares of Gamay, and 2 hectares of Chardonnay and Viognier.<\/p>\n
\nIn 2003, they once again enhanced their farm with the construction of a winery for the vinification and ageing of the wines.
