Valley Alcohol content: 14 % Vol
Grape varieties: 100 % Romorantin
Ageing potential: 10 years
Temperature: 8 to 10 °C
Vinification : The grapes are pressed.
The juices are then settled cold and placed in a thermo-regulated stainless steel tank.
Alcoholic fermentation is naturally initiated by indigenous yeasts at 14° C for 20 days. Malolalctic fermentation takes place naturally depending on the vintage, partially or entirely. Aged in barrels for 2 months
