The Domaine de la Bergerie was bought at La Bougie in 1961 by Marie-Scolastique, Yves’ grandmother, a woman with a strong character who had been running her estate alone since the age of 37. This acquisition was added to the family’s winemaking heritage. In 1964, Marie-Scolastique passed on the estate to her daughter Marie-Agnès. From then on, a long restoration of the vineyard began. In 1979, Yves joined his parents on the family farm. He is the seventh generation of winegrowers. Since then, Yves and Marie-Annick, his wife, have acquired great terroirs (Savennières, Quarts de Chaume Grand Cru, Coteaux du Layon 1er Cru Chaume). They devote themselves to the work of their vines and the quality of their wine.

WINEMAKING

After a long pressing and a light settling, fermentation (from indigenous yeasts) and ageing are carried out in vats for one part, in barrels for about 18 months.

TASTING NOTES

This 1er cru combines the texture provided by botrytis with the liveliness of raisined
grapes. The whole offers concentration and strength supported by the
schist terroirs.
For the agreement we invite you on a trip to Cyprus… We suggest you bring together
the 1er cru Chaume and a typical cheese of this country;
Halloumi. Start by marinating it with a little acacia honey and coriander seeds. Grill it on the barbecue. Finally, come and bread it with a little peanuts and crushed black sesame. Wine and this cheese cooked in this way complement each other particularly well.

OUR ADVICE

We recommend a serving temperature between 10°C and 12°C with possible decanting. It can be tasted now, or in the next ten to fifteen years.
