SAUMUR BLANC DPO DOMAINE DU CAILLOU

So my first white cuvée, we are on a Saumur blanc, the cuvée La Grande Pièce in 2021, so it’s the first organic cuvée of the estate, we are on a Chenin grape variety 100% aged in fertilizer jars for six months and the particularity of this wine is that we are in indigenous yeast, so there was no yeast age, we went to look for grapes a little before the harvest where we made misery at the beginning the fermentations naturally and then we incorporated two weeks later when we harvested so here we are on a very simple ageing zero inputs and so it’s already the 2021 vintage we are on very nice aromas and at the level of movement to little on the menu it can accompany small dishes with in particular snails at the level of starters or to the critics it goes very well
