The Château de la Fessardière, built in the seventeenth century, houses under its large terrace the entrance to the older wine cellar, which extends under the vines located at the back of the castle. The cellar was designed to receive the grapes and vinify them, its construction is made of vaults and domes and contains imposing vats dug into the tufa stone.

Description

WINEMAKING

Produced since 2005, this cuvée owes its particularity to the chalky terroir which gives typicity to these grapes harvested at over-ripe for a yield of 30 to 35 hectolitres per hectare. Ageing is carried out in new oak barrels over a period of 18 to 24 months with stirring twice a week for the first 6 months. The Admiral is also available in magnum (150 cl).

TASTING

Deep garnet, fresh nose, notes of black fruits, truffle and spices. Structured palate, spicy with sweet black fruits, very long in the mouth and very nice volume, unctuous. The name of the cuvée pays tribute to Admiral Abel Aubert Du Petit Thouars born at the castle in 1793 (see The estate).

SERVICE AND AGREEMENTS

Very popular as an accompaniment to a grilled prime rib or spicy dishes. Uncork one to two hours in advance or decant to allow the aromas to open up. To be kept.
