Today we own around 1.5 hectares of Parisienne. The grape variety expresses itself on clay flint soils which give it a slight acidity. However, the cuvées remain balanced thanks to the concentration of sugar provided by its small grape balls.
After harvesting by hand, the The grapes are pressed directly and then matured in old oak barrels.
The micro-oxygenation carried out during this ageing process extracts all the complexity of its aromas.
A wine for laying down par excellence, la Parisienne is characterised by its liveliness on the palate and its originality. Indeed, its atypical and complex aromatic palette often leads tasters to confuse it with a sweet white. The dominant notes are candied wild strawberry, followed by the tangy notes of candy. The palate is structured, balanced and suave.
A single varietal wine known here at Domaine Badiller as “la parisienne”, the old grape variety of grandfather Badiller, recently revived by his grandson.

Description

La Parisienne est un rosé unique en son genre, c’est un demi-sec qui ne ressemble à aucun autre rosé. Osez sortir des sentiers battus avec la Parisienne. Au nez vous pourrez lui trouver des arômes de fraises des bois et de fruits rouges confiturés. En bouche, ce rosé est structuré et équilibré, rond et suave.
Rosé divinement doux, aux notes acidulées de fraise des bois, la Parisienne est un vin atypique faisant partie intégrante de notre histoire. Et pour cause, à ce jour, nous sommes les seuls à cultiver son cépage si mystérieux. Présents sur les terres ridelloises au début du XXe siècle, ce dernier a presque totalement disparu du terroir avant une mission de sauvetage dans les années 90.
