Le « côt », vieux cépage très utilisé en Touraine, est un synonyme de « malbec » dans le Bordelais ou « auxerrois » à Cahors.
It’s a powerful, tannic grape variety that’s often described as rustic.
Vinification
:
Cold maceration for a week to extract the flavours without the tannins, then fermentation for 12 days at a temperature of 22°.
Aged on lees for 3 months.
Tasting:
This is a round wine with very pronounced aromas of cherries and violets and a full, supple palate.
This is a wine that can be drunk young with fruit, or laid down for a few years.

Decant a few hours before serving.
Shelf life from 2 to 10 years.
