Winegrowers for several generations (1750), the Jean-Paul Picard et fils estate cultivates with passion its 14 hectares of vines, all located on the slopes of Bué which are among the best in Sancerre.

Having learned from the lessons of the past, they have been able to adapt modern techniques while preserving manual harvesting and artisanal know-how.

Since Mickael’s arrival on the farm in 2004, the estate has also been cultivating vines in the Menetou-Salon appellation to produce white and red wines.

Vinification:Hand-picked (very important for the reds), sorted by plot. Cold pre-fermentation maceration for a minimum of 3 days. Alcoholic fermentation with temperature control, punching down and pumping over.

Ageing :Malolactic fermentation in vats. Fining and light filtration before bottling Taste appreciation:
Fairly intense ruby red colour. Nose of red fruit (mainly cherry and raspberry). On the palate: fleshy and straightforward, with a well-balanced finish and lingering fruitiness.

Ageing potential: 7-8 years

Serve at 12-14° C

Food & wine pairing :
Goes well with: Game, white meat and cheese. A poultry croustade with wild mushrooms as a starter, a leek and bacon quiche as a hot dish with small game birds, duck and stewed lamb.
