Franck Bimont is the talent of a simple man. He lets the vines express themselves freely, bringing out the specificity of each vintage and creating expressive, elegant and much-loved wines. In the Loire Valley, the Domaine des Guyons is located in the heart of the southern Saumur region, in the charming village of Le Puy Notre Dame. A Saumur mecca, Le Puy Notre Dame is a concentration of talented winemakers, including Franck Bimont at the Domaine des Guyons.
On this 19-hectare estate, the vines, which have an average age of 50 years, grow on Turonian soils.
The limestone in particular gives the wine its freshness and finesse, but the tuffeau has also enabled huge cellars to be built, allowing the wine to mature quietly.
Franck Bimont produces a range of highly expressive, elegant wines.

Description

A garnet-red colour, noticeably evolved; a nose of candied red fruit (cherry) as well as fresh fruit such as Burlat cherry; a fresh attack on the palate, of candied cherry and garrigue, full-bodied with a slightly bitter touch on the finish giving freshness.

VINEYARDS: Old vines (70 years old) of 100% Cabernet Franc from massal selection.

TERROIR: Upper Turonian clay-limestone with numerous pebbles (perruche), which allow for great thermal reverberation throughout the vine’s growth cycle.

VINIFICATION & AGEING :
Vinification takes place in small, non-thermo-controlled concrete vats, with no added inputs. Destemmed harvest with long maceration (30 days) without punching down.
The end of alcoholic fermentation and malolactic fermentation take place in barrels. The wine is matured for 18 to 24 months, with regular topping up. Residual sugars and alcohol: 2g/l and 13% Vol.

VITICULTURE: worked rols; no chemical fertilisers; search for beautiful, healthy bunches (single Guyot pruning, aeration by splitting, thinning, leaf removal, etc.).

WARNING: this wine should be enjoyed 3 to 4 years after harvesting. Red wine for laying down (15 years).

WINE & FOOD Pairings: Decant at around 17°C and serve with grilled meats or soft cheeses for immediate pleasure.
