Harvest
Manual. At full maturity. The date of harvest depends on the degree, acidity and

Winemaking
The entire harvest is sorted on a table in the winery, then destemmed to ensure that only the ripest grapes are used.
Maceration lasts 18 to 24 days at a temperature of 20°.
Breeding
Matured in vats only. For a year, we work on the roundness and suppleness of the tannins.
Tasting
Dark ruby color, dominated by black fruit aromas. Some spicy notes. The attack is full and fleshy. It is supported by a strong tannic structure.

Serve at 15, 16° with roast or small game.
