Winegrowers for several generations (since 1750), the Jean-Paul Picard et Fils estate passionately cultivates its 14 hectares of vines, all located on the Bué hillsides, which are among the best in the Sancerre region.

Having learnt the lessons of the past, they have adapted modern techniques while retaining manual harvesting and traditional know-how.

Since Mickael joined the domaine in 2004, the estate has also been growing vines in the Menetou-Salon appellation to produce white and red wines.

Vinification:Hand-picked (very important for the reds), sorted by plot. Cold pre-fermentation maceration for a minimum of 3 days. Alcoholic fermentation with temperature control, punching down and pumping over.

Ageing :Malolactic fermentation in vats. Fining and light filtration before bottling Taste evaluation:
Fairly deep ruby red colour. Nose of red fruit (mainly cherry and raspberry). On the palate: fleshy and straightforward, with a well-balanced finish and lingering fruitiness.

Ageing potential: 7-8 years

Serve at 12-14° C

Food & wine pairing :
Goes well with: Game, white meat and cheese. A poultry croustade with wild mushrooms as a starter, a leek and bacon quiche as a hot dish with small game birds, duck and stewed lamb.
