Description
TERROIR
Siliceous clay with a lot of flint on the surface. Limestone at 40-60cm. Plot of land surrounding the Château de la Dorée, from which a stream, the Nantilly, flows into the Indre.
Winemaking
Harvested by hand, then sorted in the press. Long, gentle fermentation in stainless steel tanks at temperatures between 22° and 30°C. Hot post-fermentation maceration for 10 days. Reassemble every day for a better infusion. Malolactic fermentation under marc. Decanting, then barrel ageing for 10 months
Round and tannic, it goes well with fish, white meats and grilled meats.
