The estate is located in the Loire Valley, and is part of one of the smallest appellations: A.O.C Touraine Noble Joué.
Bernard and Michel Rousseau are two brothers in partnership, the 4th generation of the same family on an 18-hectare organic vineyard, producing Pinot Meunier, Pinot Noir and Pinot Gris.

Description
The soil:
Siliceous clay with a lot of flint on the surface. Limestone at 20-30cm. 100% Pinot Noir
Winemaking:
Hand-harvested and destemmed.
The grapes are placed entirely in a stainless steel vat, where they remain for 2 to 3 days at a temperature of 4-6°, the juice being pumped over the pomace. This is the cold pre-fermentation phase to obtain the aroma precursors. Fermentation then takes place at a temperature of 18° to 22° for 8 days to preserve maximum aroma.
Matured on the lees in vats for 5 months.
Food and wine pairings:
This is a very supple wine with very pronounced Morello cherry aromas. Ideal for meats and summer barbecues.
Storage: 2 to 5 years.
