The estate is farmed organically (AB), with rosés accounting for 50% of total annual production, reds 30% and whites 20%.

For the whites, certified organic from 2019, the majority Chenin is blended with Chardonnay.

Pinot Noir accounts for a third of the total grape varieties and half of the blend for the reds, Cabernet Franc and Sauvignon for 40% and Negrette for 10%.

Gamay predominates for the rosé, with Cabernet Franc and Pinot Noir completing the blend for the AOC.

Description

The Pissotte Rosé de la Cuvée Origine is a wine with lovely notes of fresh fruit such as raspberries and wild strawberries.

VARIETY :
80% Gamay and 20% Cabernet franc
JORDTYPE :
Kiselholdigt ler, skiferbund.
VINEYARD WORK :
Total grassing, light hoeing if necessary. Double Guyot pruning.
VINIFICATION :
Direct pressing, cold settling.
LEVAGE :
3 months on fine lees.

This fresh, light wine is a perfect companion throughout the meal, from aperitif to dessert.

The clay-silica soil on red schist allows the grape varieties to retain their fruitiness and freshness, much to the delight of our palates.

And for those who are curious, the story goes that “L’Arbre aux fées” is a cedar tree that has stood in the courtyard of Domaine Coirier for 150 years.
