Once upon a time, there was a wonderful story of winegrowers and winemakers… that of the Norguet family, who have been running their Domaine du Four à Chaux for 7 generations, in the heart of the Vendôme region at Thoré-la-Rochette.
The Four à Chaux (lime kiln) is a protected site dating back to 1767. It is a vestige of the time when tuffeau, a soft limestone with flint extracted from the hillsides, was used to build the châteaux of the Loire, the surrounding manor houses and the houses of the Loire region.
In a traditional setting, the estate boasts magnificent two-hundred-year-old troglodyte cellars, dedicated to the cultivation of mushrooms and the ageing of local wines. Today, they have become a convivial venue for tastings of red, white, rosé and grey wines. Norguet, vigneron fer de lance de l’appellation, cultive 29 hectares de vignes à Thoré la Rochette, petit village abrité dans la Vallée du Loir et vinifie avec passion ses vins dans une ancienne cave.

Description

Immerse yourself in the world of this exquisite Coteaux du Vendômois vin gris from Domaine du Four à Chaux in Thoré-la-Rochette (41). This wine, typical of the region, is a wine of pleasure, a wine of tonality and a true wine of the plate. It will accompany you from aperitif to dessert.
Vinification : This is a red grape with white juice pressed directly after harvesting to obtain a grey wine with a “roach eye” or even “onion skin” colour. It ferments in a stainless steel vat at a temperature of 18°C.
Grape variety: 100% Pineau d’Aunis
Soil : Clay and flint
Average yield: 55 hl / Ha
Alcohol content: 12%.
Ageing: 1 to 2 years
Serving temperature: between 8 and 10 °C
Tasting notes: The local Pineau d’Aunis grape variety has a slightly salmon colour, described as “partridge or roach eye”. The wine is lively thanks to its invigorating acidity, with typical subtle notes of pepper, spices and red fruit.
Food & wine pairing: Light and fresh as an aperitif, but make no mistake, this cuvée goes generously with rillettes, charcuterie and finely spiced grilled meats.
