Organic farming, the rosés represent 50% of the total annual production, the reds 30% and the whites 20%.
For the whites, certified organic since 2019, the majority of the Chenin is blended with Chardonnay.
Pinot Noir represents a third of the total grape varieties and half of the blend for the reds, Cabernet Franc and Sauvignon (40%) and Négrette 10%.
Gamay is the majority for rosé, Cabernet Franc and Pinot Noir complete this blend for the AOC.

Description
Cuvée Arbre aux Fées Rouge is a blend of AOC Fiefs Vendéens wines with 80% Pinot Noir, 30% Cabernet Franc and 20% Négrette. This crimson-cloaked red offers a nose of blackberries and wild Morello cherries. Fresh and tender, with supple tannins that give it depth. Best with duck, white meats and pressed cheeses. The clay-silica soil on red schist allows the grape varieties to retain their fruitiness and freshness, much to the delight of our palates. And for those who are curious, the story goes that “L’Arbre aux fées” is a cedar tree that has stood in the courtyard of Domaine Coirier for 150 years.

SOIL TYPE:
Siliceous clay, schist bottom.
WORK IN THE VINEYARD:
Total grassing, light hoeing if necessary. Double Guyot pruning.
WINEMAKING:
Maceration 8 to 10 days, light pumping over once a day, separation of presses.
