Winemaking:
This cuvée has been selected by sorting from the finest hillsides with clay-limestone soil (an amalgam of shells and clay). At harvest time, grapes of excellent ripeness are picked with the greatest care. A very slow pressing process extracts the best juice from the pulp. Fermentation in oak barrels at 15-18°C and the slow maturation of the wines on their lees provide all the conditions for excellent quality.

Exotic fruit Tarte Tatin with salted butter caramel.
Tasting :
Colour: deep yellow with light orange highlights.
Nose: Exotic at first, it evolves with successive aromatic touches, moving from white fruit (pears, nectarines) to more candied notes of fig and mango. On aeration, the minerality comes through.
Palate: Very rich and unctuous on the attack, the palate evolves on spices and very ripe exotic fruit (mango, pineapple). The acidity reinforces the freshness of the whole and leaves a light palate.
