Winemaking

Manual harvesting and destemming.
The grapes are put entirely in a stainless steel tank where they stay for 2 to 3 days at 4-6° temperature, pumping the juice over the pomace. This is the cold pre-fermentation phase to obtain the aroma precursors. Fermentation then takes place at a temperature of 18 to 22°C for 8 days to preserve as much aroma as possible. Aged on lees in vats for 5 months
